Berry Beet Milkshake

YOU WILL NEED: Ice Cube Tray, Blender

Healthy Berry Beet Milkshake

10 ounces frozen organic raspberries or strawberries

1 cup raw, organic or grass-fed whole milk or full-fat coconut milk, frozen into ice cubes

2 medium organic red beets, peeled and cooked

3/4 cup raw, organic or grass-fed whole milk or full-fat coconut milk

2-3 tablespoons light colored raw honey

1 tablespoon organic vanilla extract

2 tablespoons cold water soluble grass-fed collagen – optional (<– this is the only grass-fed collagen I use and recommend)

1/8 teaspoon Celtic sea salt – optional (<– this is my favorite sea salt)


The day before you want to make the smoothie, freeze berries. Pour choice of milk into a BPA-free silicone or stainless steel ice cube tray. Freeze overnight until milk is frozen into ice cubes.

Peel beets and cut into one inch chunks. Steam {using a steamer insert in a small saucepan} or low boil {in a small saucepan almost covered with water} until fork tender, about 7-10 minutes. Remove beets from saucepan, place on parchment paper lined baking sheet and place in the freezer until cold and frozen, about 1 hour.

Place frozen berries, frozen beets, frozen milk ice cubes and all other ingredients in a high-powered blender. Blend on high speed until smooth, thick and fully combined. [Note: If you’re having trouble blending it, you can add a small amount of liquid, but try not to add too much or it won’t be thick like a milkshake.] Serve immediately.


If you use raspberries and prefer your smoothie to be seedless, strain through a fine mesh sieve before serving.
